This experience confirmed her childhood love for being in the kitchen. The constant buzz and hustle-and-bustle of working at the Flagstaff House inspired her to further explore a career in cuisine. Simons also spent some time traveling through Europe and Asia. These travels, especially through Nepal, India, and Thailand, broadened her cuisine horizons and introduced her to new tastes and flavors, which she would later incorporate into her menu.

The Food

In 2004, Simons fulfilled a life-long dream and opened up Shamane’s Bake Shoppe, which serves a broad variety of cakes, pies (both savory and sweet), cookies. brownies, and tarts. Additionally, Shamane’s also features a café menu, which includes all the comfort food necessities: sandwiches, hot pies, soup, and, of course, desserts.
